I have a 701 with a hydraulic clutch and a nuda with a cable clutch. Both clutch setups handle the power fine the difference between manual hydraulic is the pull.

Hydraulic will give lighter pedal effort and you wont have to worry about cable adjustment or potential breakage. It will present a little cleaner set up but it is definitely a bit more work. Apart from simplicity and possibly reliability the hydraulic clutch is simply way better for its light feel one finger actuation. The cable clutch costs low than that of hydraulics.
Id actually prefer the hydraulic setup but the aftermarket kits which use purpose built components have one problem theyre not easy to repair in an emergency. Most cars made from the 90s onward have hydraulic clutches. It relies on reservoir cylinders to control pressure in relation to how the clutch pedal is depressed. Whereas the hydraulic clutches comprise bore pipes master cylinder small cylinders and fluid. With a cable clutch lever force is transferred via a bowden cable which has steel wire running within a flexible sheath. Cable is cheaper takes less time to set up and doesnt require bleeding or the addition of a slave cylinder.
With hydraulic the feel is lost. The cable clutch in the civic felt exactly the same even when it was 25 below out. The cable is a harder pull but the engagement is far better. I get why cable is preferred by some for off road and adv applications. This is because the mechanical clutch is made up of cable wire which is easy to maintain and set up. A hydraulic clutch uses hydraulic fluid instead of a cable to move the clutch disc.
With a hydraulic clutch fluid is used to convey force just like in. Theres still a narrow engagement zone theres just no feel of where that zone is and it changes with the engine temperature so one gets used to the range of where the clutch will engage. The cable is probably the easier to set up and the cable can be shielded from header heat. Plus i felt the cable clutch had more of a direct feeling to it and it felt like it had feedback of what the clutch was doing something that hydraulic fluid tends to cover up.
